Sucrose Processing Upgrade Carried Out in a Continuous Membrane Reactor Using Invertase, Glucose Oxidase and Catalase

Abstract:

This work deals with the use of the following enzymes, invertase (I), glucose oxidase (GO) and catalase, in order to convert sucrose into fructose and gluconic acid by using a 10mL­membrane reactor (MR) coupled to a 100kDa­ultrafiltration membrane. It was observed that the enzymes presented dissimilarity regarding their respective activity and thermal stability. The conversion was carried out through a two­step continuous process – invertase hydrolyzed sucrose and GO oxidized glucose. A 90% overall conversion in reference to the oxidation of glucose to gluconic acid was attained.
